Parmesan Garlic Shrimp

This is my favorite quick, healthy(ish) dinner that can be made a million ways. This time, I made it with butternut squash and green beans. But substitutions are so easy for this recipe, and the shrimp goes with just about anything. Just pick a vegetable that’s in season and pair it with something green. That’s literally all I do.

I almost always have all the ingredients on hand to make this (I like to keep frozen shrimp in the freezer for the times when I have absolutely no other groceries), so this is easy to whip up when I have nothing else to make.

Parmesan Garlic Shrimp



30 raw medium-sized shrimp, peeled + without tails

2 tbsp olive oil

1 tbsp minced garlic or 2 large cloves minced

1/4 cup shredded parmesan cheese

1 tbsp parsley

1 tbsp salt

1 tbsp pepper


1.Heat olive oil and garlic in a skillet over medium heat.

2. Add the shrimp and mix well with the garlic and olive oil.

3. Add parsley, salt + pepper.

4. Cook until the shrimp turns a pink-ish color, about 2-3 minutes.

5. Add the parmesan.

6. Mix well.

7. Pair with your favorite vegetables.

That’s it! That’s literally all you do! Isn’t it so easy?! This makes about 2-3 servings, depending on how much you eat, so I’ll have leftovers for dinner for the next few nights. Here’s a video of an Instagram story that I made showing you how I made this dinner:
