Overnight Oats + 6 Ways To Make Them

Overnight oats seem to be all the rage when it comes to healthy meal prep breakfasts. Since I’m lucky enough to not have to prep any of my meals (thanks, meal plan!), I don’t spend a lot of time planning out what I’m going to eat for every meal. However, I’ve found it difficult to find time to hit the dining hall before class in the mornings. I suppose my half-asleep self thinks 20 extra minutes of sleep is better than a hot breakfast.

So lately, I’ve come to accept the fact that I won’t be eating eggs + bacon every morning and need to find some other healthy alternatives. Thus, my obsession with overnight oats. They’re seriously the easiest thing to prep the night before and can be made with so many different toppings, so I wanted to share my base recipe and then a few of my favorite ways to make them.

Overnight Oats

Ingredients

1/2 cup rolled oats

2/3 cup coconut milk (or regular milk or almond milk or whatever you prefer)

1 tablespoon chia seeds

2 teaspoons maple syrup or agave (or any sweetener)

Directions

1.Combine all dry ingredients.

2. Add coconut milk.

3. Mix well.

4. Let sit 6-8 hours in the refrigerator.

5. Top with whatever you’d like in the morning. Some of my favorite flavor combinations are…

Berry

1/4 cup strawberries

1/4 cup blueberries

1/4 cup raspberries

Vanilla + Blueberry

1 + 1/2 teaspoons vanilla extract

1/2 cup blueberries

*add vanilla extract to the original oats + milk + chia seed mixture.

Banana + Peanut Butter + Chocolate

2 tablespoons peanut butter

1 banana, chopped

1 tablespoon dark chocolate chunks

*add peanut butter to the original oats + milk + chia seed mixture.

2 tablespoons peanut butter

1/2 cup strawberries

*add peanut butter to the original oats + milk + chia seed mixture.

Raspberry + Vanilla + Dark Chocolate

1 + 1/2 teaspoons vanilla extract

1/2 cup raspberries

1 tablespoon dark chocolate chunks.

*add vanilla extract to the original oats + milk + chia seed mixture.

Pineapple Coconut

1/2 cup chopped pineapple

2 tablespoons dried coconut flakes

So that’s what, one combination for almost every day of the week? I cannot emphasize enough how easy overnight oats are to make and how awesome it is to wake up in the morning and barely have to prep breakfast.
